Rice With Almonds & Raisins |

This is a great side dish for a variety of meats. Toast the almonds to add another dimension of flavor. Especially good with Peachy Pork Chops. Could easily be made vegetarian by using vegetable broth. Ingredients:
1 tablespoon butter |
1/3 cup finely chopped onion |
1 cup uncooked white rice |
2 tablespoons raisins |
1 1/2 cups chicken broth |
salt and pepper |
1/4 cup sliced almonds, toasted, if desired |
Directions:
1. Melt butter in a medium saucepan over medium heat. Saute onion, stirring, until tender. Stir in the rice, raisins, broth, salt and pepper. Bring to a boil. 2. Reduce heat to low, cover and simmer 15 to 20 minutes, or until rice is cooked and liquid is absorbed. Stir in almonds before serving. |
