Rice W/sauted Tomato gravy |

I crave this dish! It's satisfying and comforting, and offers a thrill to the taste buds because of the sweet and acidic undertones. Ingredients:
1 cup of uncooked long grain rice |
2 cups water |
1 pkg of ham seasoning (goya) |
salt and pepper to taste |
1 can whole tomatoes |
1/4 cup chopped onions |
1 pkg of ham seasoning (goya) |
1 tbls butter |
salt and pepper to taste |
Directions:
1. To cook rice: 2. Add first 4 ingredients to a rice cooker, and cook as directed for your rice cooker. If you don't have a rice cooker, and first 4 ingredients to a small sauce pan, stir. Bring to a boil over high heat, reduce heat to low, and cover and simmer for 25 minutes, or until water is absorbed. 3. Meanwhile, melt butter in a small fry pan over medium heat, stir in ham seasoning. Add onions to fry pan, and saute for about 2 minutes. Next, add entire can of tomatoes and cover. Continue to cook over medium for about 6 minutes. Remove lid, and stir tomatoes breaking up with a fork. Replace lid and continue to cook until tomato juices reduce (approx. 8 more minutes on medium/low heat) stirring occasionally. Serve tomato gravy over the cooked rice. |
