Rice-a-roni-type dish. Ingredients:
2 cups vegetable broth |
1 cup long grain rice |
1/2 cup sliced raw carrot |
1/2 cup broccoli, tips |
salt & pepper |
Directions:
1. Add rice to broth (or water) and bring to a boil. 2. When boiling, add vegetables & seasoning, return to boil; reduce heat. 3. Simmer for approx 20 min (until water is absorbed, rice is tender). |
