Rice & Tuna Salad
Ingredients:
50 g brown rice
130 g tuna in brine
2 spring onions
35 g cucumber
1 tbsp balsamic vinegar
Directions:
1. Cook the rice as per instructions. Allow to cool. Open the can of tuna, drain, and flake into the rice. Chop in the onions and add the balsamic vinegar - mix together well. Top with cucumber chunks or slices.
