This recipe was one my mother used to make for her women club luncheons.
Ingredients:
2 cups raw rice, cook, cool, and rinsed
2 cups canned shrimp ,drained and risned
1 1/2 cup raw diced cauliflower
1/2 cup diced green pepper
1 cup mayonnaise
3 tsp. chopped onion, fined
2 tsp french dressing
2 tsp lemon
1/2 tsp. salt and pepper
Directions:
1. In a large bowl mix together prepared rice, drained shrimp, diced cauliflower and diced green pepper.
2. Then in a separate bowl blend together mayonnaise, French dressing, chopped onion, lemon juice, and seasonings.
3. Add this to the rice mixture and chill for an hour or over night.
4. Serve about 1/2 to 3/4 cups scoops on a lettuce leaf.
5. I like color, so I would add a tomato wedge to the side.
