A quiche but made with rice and sausage, pepperoni Great any time breakfast, lunch, side dishes, appetizers, etc. Ingredients:
2 cups cooked rice |
1 pound cooked & crumbled italian sausage |
3/4 stick of pepperoni (cut into small cubes) |
1 large block of mozzerella cheese (cut into small cubes) |
5-6 eggs well beaten |
1 cup parmesan cheese |
salt & pepper |
1/2 to 1 cup well drained roasted peppers cut into pieces |
Directions:
1. Mix all ingredients until well blended 2. Put into a greased 9 x 13 pan 3. Bake 45-50 minutes or till golden brown 4. Cut into squares and serve 5. Optional: add olives, scallions, mushrooms, be creative |
