This is a fairly standard rice pudding recipe, except that it is improved by using Minute Rice. This cuts down prep time, but doesn't seem to sacrifice flavor or texture of the original. Ingredients:
2/3 cup water |
2/3 cup minute rice |
dash of salt |
1 1/2 cup whole milk |
1 egg yolk slightly beaten |
1/3 cup sugar |
1/3 cup raisins |
1/8 tsp cinnamon |
1/8 tsp nutmeg |
1 tbsp butter |
Directions:
1. Add the salt to the water and bring to a rolling boil 2. Stir in the rice, cover and remove from heat 3. Let stand 5 minutes 4. Blend the egg yolk and milk 5. Mix egg and milk thoroughly into the rice 6. Add sugar and raisins 7. Add the cinnamon, nutmeg and butter 8. Mix well 9. Return to heat 10. Heat until boiling again, stirring constantly 11. Remove from heat 12. Let stand at least 1 hour 13. This dish may be served cold or warm. |
