Rice Pudding from Leftover Rice |

good way to use up leftover rice! shorter grains give creamier results but basmati and jasmine can work too. you can leave out the eggs for a less rich version. Ingredients:
2 cups cooked rice |
2 cups milk |
1/2 cup half-and-half (or cream) |
1/2 cup sugar |
1 teaspoon vanilla |
1 pinch cinnamon |
1/4-1/2 cup raisins |
2 egg yolks |
Directions:
1. bring rice, milk, cream and sugar to a boil. 2. simmer 15 minutes stirring occasionally. 3. stir in vanilla, cinnamon and raisins. 4. cook until thick and creamy. 5. tip: if you stir a lot at the end it will be creamier! 6. turn off heat and stir in egg yolks. 7. serve warm or chilled, i prefer chilled with this recipe. |
