This is a nice and EASY rice pudding recipe. I included almonds and also cardamom, although the original recipe did not specify these ingredients, since that's what my favorite Indian restaurant includes in their rice pudding. Comfort food at its best... Ingredients:
3/4 cup minute rice |
2 3/4 cups milk |
1/3 cup sugar |
1 tablespoon butter |
1/2 teaspoon salt |
1/2 teaspoon vanilla |
1/4 teaspoon nutmeg |
cinnamon |
sugar |
Directions:
1. Combine Minute Rice, milk, sugar, butter, salt, vanilla and nutmeg in a greased 1 Quart baking dish. (I added my almonds and cardamom pods here.) 2. Bake in a 350 degree oven for 1 hour. 3. Stir after 15 minutes and again when pudding is done. 4. Then sprinkle with cinnamon/sugar. 5. Serve warm or chilled. 6. The pudding will thicken as it stands. |
