Very delicious, very satisfying. Ingredients:
1 cup water |
1/2 cup short-grain rice |
5 cups milk |
2 teaspoons cornstarch |
1/2 cup granulated sugar |
1 teaspoon vanilla |
1/2 cup raisins |
1 tablespoon cinnamon |
Directions:
1. Bring water to a boil in a saucepan. 2. Add rice and cover. 3. Reduce heat and simmer for 15 minutes or until water is absorbed. 4. Place rice in 4 1/2 cups of the milk in a large heavy saucepan. 5. Cook until milk just comes to a boil. 6. Meanwhile combine cornstarch with sugar and very gradually whisk in remaining 1/2 cup milk until mixture is smooth. 7. Whisk this mixture into hot rice milk mixture. 8. Reduce heat to low. 9. Cover and cook gently for 40 - 55 minutes, or until rice is very thick and creamy. 10. Add vanilla and raisins. 11. Pour into individual serving dishes or one large serving bowl. 12.
