I make this quite often at home when I'm sick of potatoes and want a change. Goes well with just about anything. Ingredients:
1 cup of long grain and wild rice (cook according to pkg) |
1 red pepper chopped ( i like fairly large peices) |
1 pkg mushrooms sliced |
8 stalks of asparagus cut into pieces |
1 carrot cut into match stick pieces |
1 small zuchinni cut into fairly large chunk |
3 large green onions chopped |
olive oil |
salt |
pepper |
3/4 cup of freshly grated parmesan |
Directions:
1. cook rice according to pkg directions 2. place all cut up vegetables in a large bowl, coat with olive oil, salt and pepper. Spread vegetables except green onions on a large cookie sheet and bake 10 min in a 475 degree oven, turn vegetables and cook 5 minutes longer or until carmalized. 3. Add veg and onions to rice, stir in parmesan cheese, season with salt and pepper to taste |
