Ingredients:
1/3 cup white rice, uncooked
1 tablespoon onion, chopped
2 tablespoons butter (light, diet, fat-free)
1 cup chicken broth
1 (14 -16 ounce) can mixed vegetables, drained
Directions:
1. In a small saucepan, cook rice, onion, and butter for 5 minutes or until lightly browned.
2. Add broth and cover.
3. Cook for about 20 minutes and add veggies.
4. Stir and serve.
