This recipe is from Light Take Five cookbook. Easy side dish that could be whipped up in minutes. Ingredients:
1/3 cup white rice, uncooked |
1 tablespoon onion, chopped |
2 tablespoons butter (light, diet, fat-free) |
1 cup chicken broth |
1 (14 -16 ounce) can mixed vegetables, drained |
Directions:
1. In a small saucepan, cook rice, onion, and butter for 5 minutes or until lightly browned. 2. Add broth and cover. 3. Cook for about 20 minutes and add veggies. 4. Stir and serve. |
