Rice Pilaf

This is a great way to liven up dull rice. I use a multi-grain rice for flavor and fiber, but you can easily sub with your favorite rice.
Ingredients:
2 cups rice, uncooked, not instant variety
4 cups chicken stock
1 cup water
1/4 cup olive oil
2 carrots, chopped
1 green pepper, chopped
6 scallions, with green tops, chopped
3 tablespoons soy sauce
1 bunch fresh parsley, chopped, most stems removed
Directions:
1. Heat olive oil in large pot.
2. Add rice and stir.
3. Fry for 5-7 minutes.
4. Add remaining ingredients, stir and heat to boil.
5. Cover and keep on low heat for 1 hour, stirring once or twice.
6. Serve and enjoy!
