This is a great way to liven up dull rice. I use a multi-grain rice for flavor and fiber, but you can easily sub with your favorite rice. Ingredients:
2 cups rice, uncooked, not instant variety |
4 cups chicken stock |
1 cup water |
1/4 cup olive oil |
2 carrots, chopped |
1 green pepper, chopped |
6 scallions, with green tops, chopped |
3 tablespoons soy sauce |
1 bunch fresh parsley, chopped, most stems removed |
Directions:
1. Heat olive oil in large pot. 2. Add rice and stir. 3. Fry for 5-7 minutes. 4. Add remaining ingredients, stir and heat to boil. 5. Cover and keep on low heat for 1 hour, stirring once or twice. 6. Serve and enjoy! |
