A basic rice pilaf that could be altered to add other veggies, etc. I know I got this from a cookbook, but I can't remember which one. Ingredients:
2 cups chopped scallions |
3 tablespoons butter |
1 1/2 cups uncooked long grain rice |
3 cups liquid (water,chicken broth or a combo of both) |
1 1/2 cups shredded carrots |
1/2 teaspoon dried thyme |
1/2 teaspoon salt |
parsley, if desired |
Directions:
1. Saute scallions in butter over low heat; add rice, stirring to coat all grains. Add remainder of ingredients except parsley. Bring to a boil; lower heat and cook, covered, for 20 minutes. When done, toss with parsley, if desired. |
