This is a very unusual but very tasty pie. I was hesitant about making it because of the large quantity ingredients. I did and I never regretted it. This is a fabulous pie and loved by all. Try it you will love it I promise. Ingredients:
1 pound white rice |
1-1/2 sticks salted butter |
24 eggs |
2-1/2 cups sugar |
2 cups heavy cream |
1 tablespoon pure vanilla extract |
2 pounds ricotta cheese |
1 teaspoon salt |
milk |
Directions:
1. Cook rice for 10 minutes with salt then drain well. 2. Add to rice enough milk to cover it then add butter and continue cooking until rice is tender and milk is absorbed. 3. Beat together eggs and sugar then add heavy cream and vanilla and mix well. 4. Add ricotta and mix well with rice mixture. 5. Pour into three pie pans and bake at 350 for 30 minutes. |
