Rice Patties With Mushroom Sauce |

These are a great way to use up leftover rice-a nice change for a side dish. Ingredients:
for patties |
1 1/4 c cooked rice, warmed up |
1/4 c onion, chopped |
1/4 c red pepper, chopped finely |
1/4 c seasoned bread crumbs (dry) |
1 egg |
1/8 tsp cayenned pepper |
2 tbsp vegetable oil |
sauce |
1 tbsp butter |
1 c fresh mushrooms, sliced |
1/4 c green onions, sliced |
2 tbsp flour |
1/4 tsp salt |
1/4 tsp pepper |
1 c beef broth |
1/4 c chopped toasted walnuts |
Directions:
1. For the patties: 2. Combine all patty ingredients (except veg. oil) in a large bowl and form into 4 patties about 3/4 inch thick. 3. Cover and refrigerate for an hour. 4. In a large frying pan heat oil over medium heat then cook patties in the oil for about 3 minutes per side or until golden. Set aside but keep warm. 5. Meanwhile, in a medium size saucepan, melt the butter then add mushrooms and green onions. Cook until veggies are softened, about 3 minutes. 6. Stir in the flour, salt, and pepper. Cook for 1 minute then stir in the broth. 7. Cook, stirring constantly, until thickened then stir in the walnuts. 8. Serve the sauce over the rice patties. |
