20 large shrimp, cooked (or crab or smoked salmon) |
20 rice paper sheets, softened |
1 mango, cut into fine strips |
1 carrot, cut into thin strips and blanched for 30 seconds |
1 red pepper, cut into thin strips |
1 cup bean sprouts |
20 large cilantro leaves |
20 mint leaves |
20 pieces boston head lettuce |
20 chives |
1/4 cup rice vinegar |
2 tablespoons fish sauce |
2 tablespoons lime juice |
2 tablespoons sugar |
1/2 teaspoon chili-garlic sauce |
Directions:
1. Mix last 5 ingredients to make sauce and let sit. 2. Assemble wrappers starting at bottom third of wrapper in order. 3. 1 shrimp, strip mango, strip carrot, strip red pepper, bean sprouts, cilantro leaf, mint leaf, lettuce in the middle (can be inside or outside). 4. Roll up and tie with a chive. 5. Serve with dipping sauce. |
