A really good way to use leftover rice. Everyone loves them!! Ingredients:
1 1/2 cups flour |
2 teaspoons baking powder |
1/2 teaspoon salt |
2 tablespoons sugar |
3 tablespoons soft shortening or 3 tablespoons liquid oil |
1 cup cold cooked white rice |
1 egg, beaten |
1 1/4 cups milk |
1/2 cup cubed cheddar cheese |
Directions:
1. Sift dry ingredients togther. Cut in shortening or stir in oil. Add rice, egg, cheese and milk; mix enough to moisten dry ingredients. 2. Grease muffin tins. Fill muffin tins 3/4 full. Bake 425 degrees for 25 minutes. |
