It's hard to find a good wheat free waffle recipe, but the trick in this one is the apple sauce. They hold together beautifully (rice flower can be crumbly) and taste warm and delicious. A perfect Sunday brunch! Read more I like mine with fresh peaches on top. Ingredients:
1 3/4 cups rice flour |
1 teaspoons baking powder |
1/4 teaspoon of salt |
1 teaspoon cinnamon |
2 eggs |
1/2 cup oil (i prefer coconut, but you need to melt it first) |
1 cup apple sauce |
1/4 cup honey |
2 tablespoons vanilla extract |
water, added 1/4 cup at a time |
Directions:
1. 1) Preheat your waffle maker to your favorite setting. 2. 2) Mix the rice flour, baking powder, salt, and cinnamon if using it. 3. 3) Add in the apple sauce, egg, oil, vanilla extract, and honey. 4. 4) Mix thoroughly, adding a 1/4 cup of water at a time until the batter is smooth and the consistency of pancake batter. 5. 5) Pour the batter 2 cups and a time into the waffle iron, cook, and enjoy! |
