Rice Flour Pancakes

An easy gluten-free alternative to pancakes. Can be used for sandwiches as well.
Ingredients:
1 cup brown rice flour
1 teaspoon baking powder
1 teaspoon cream of tartar
1 teaspoon dates or 1 teaspoon maple sugar
1/4 teaspoon salt
3/4 cup cooked brown rice
1 cup soymilk or 1 cup water
2 tablespoons vegetable oil
Directions:
1. preheat nonstick skillet.
2. combine rice flour, baking soda, cream of tartar, sugar and salt.
3. stir in the rice & toss to coat.
4. separately, combine milk or water & oil.
5. pour into the flour mixture and mix just until combined.
6. do not beat or overmix.
7. spoon onto skillet.
8. cook until tops are bubbly and edges are brown.
