Hot and crispy, these are especially good served with fish. Ingredients:
1 1/2 cups cooked rice, cooled |
1/2 cup all-purpose flour |
1 tablespoon butter, softened |
2 eggs, well beaten |
1/3 cup grated sharp cheddar cheese |
1/4 teaspoon cayenne pepper |
salt |
fresh breadcrumb |
Directions:
1. In a mixing bowl combine the rice, flour, and butter. 2. Stir in the eggs, cheese, Cayenne, and salt. 3. Shape into balls and roll in bread crumbs. 4. Fry in hot oil until golden brown-about 2 minutes. 5. Serve immediately. |
