A spicy, easy to prepare side dish to accompany any Mexican dish. White rice is standard, but you can use any type of rice you like for this yummy recipe. One option for serving is to cut a bell pepper or poblano chile in half, remove the seeds, fill with rice and top with cheese. Read more . Then, heat under the broiler until cheese is melted. Ingredients:
1 1/2 cups rice (rice cooker cups) |
2 cups vegetable broth or water |
1 tomato-flavored bouillon cube or 1 tbsp tomato paste |
1 teaspoon cumin |
1 teaspoon garlic powder |
2 tablespoons dried onions or 1/4 cup diced onions |
1/2 teaspoon cayenne pepper |
1 teaspoon chili powder |
Directions:
1. In a medium bowl, mix together rice, cumin, garlic powder, diced onion or dried onion, cayenne pepper, and chili powder. 2. Place in rice cooker. 3. Boil water; add bullion cubes and stir until dissolved. 4. Pour water over rice; stir briefly to combine. 5. Set rice cooker to cook. 6. When done, fluff with a fork and let sit approximately 10 minutes. Serve. |
