Rice and Veggies with Silverbeet |

Rice and veggie stew. Simple and, I admit, doesn't look all that pretty on the plate. A good, healthy, hot meal, side dish, or snack though. :) Ingredients:
1 cup rice |
2 carrots |
6 leaves silver beet |
410 gram tinned tomatoes |
1 teaspoon garlic |
1 teaspoon whole grain mustard |
70 grams brocoli |
70 grams peas |
70 grams corn |
Directions:
1. Boil rice and carrot for 5-10 minutes 2. Add Silverbeet, corn, brocoli, and peas. 3. Boil til rice is cooked. 4. Drain, return to pot. 5. Add 1 tin tomatoes, 1 teaspoon minced garlic, 1 teaspoon wholegrain mustard, return to heat and stir till heated through.Add herbs, salt, or pepper to taste. |
