I wanted a healthy alternative to boxed rice dishes, so with a little trial and error I came up with this recipe. It's my husband's favorite rice dish now. I like to sprinkle the rice with slivered almonds. Ingredients:
1 teaspoon olive oil |
1/4 cup orzo pasta |
1 cup long grain rice |
2 1/2 cups chicken broth |
salt and pepper |
1 small yellow onion, chopped |
2 stalks celery, chopped |
1/4 cup mushroom, chopped |
Directions:
1. Heat oil in a pan over medium heat. 2. Add orzo and rice and cook until grains look clear. 3. Add chicken broth, salt, and pepper. 4. Bring to a boil. 5. Reduce heat, cover and simmer for 15 minutes. 6. Spray a separate pan with a little cooking spray. 7. Saute chopped vegetables for about 3 - 5 minutes. 8. After the rice has finished cooking, mix sauted vegetables with rice. 9. Cover and cook for 5 more minutes. |
