The author's name was Elisa Bosley. Really quick in the microwave and you could try changing the nuts for variety, although the pecans are really good in this.
Ingredients:
1 egg, whisked with
milk (a bit)
1/3 cup cooked brown rice
2 tablespoons chopped pecans
1/2 small apple, peeled and chopped
1 dash cinnamon
Directions:
1. Mix all ingredients together in a microwaveable bowl; cover.
2. Microwave for 2 minutes or so, until egg is softly cooked.
