Rice And Mushroom Casserole |

This is comfort food. It is easy to prepare and just feels cozy and tastes good, too. Ingredients:
2 cups raw rice, not instant rice |
3 very large onions, chopped |
butter for sauteeing |
1 large can mushroom pieces, drained |
1 can cream of mushroom soup |
salt and pepper to taste |
Directions:
1. Cook the rice per the package's instructions 2. Saute' the chopped onions in a few Tbsp. of butter until just golden. 3. When golden add the mushrooms to the onions and simmer. 4. Add the cooked rice, soup, salt and pepper to the onion mixture. 5. Turn this into a greased 2 quart casserole and bake, uncovered, for about 45 minutes. |
