I have memories of my grandmother making this soup and it was always totally delicious! She used homemade chicken broth but it can be made with canned broth. It is fast and can be prepared in half an hour. Ingredients:
1/4 lb salt pork, chopped |
1 onion, chopped |
1 cup celery, thinly sliced |
salt and pepper, to taste |
1 large can chicken broth |
1 lb hamburger |
2 cups uncooked rice |
1 egg |
1/4 cup parmesan cheese |
Directions:
1. Fry salt pork, onion, and celery. 2. Add salt, pepper and hamburger. 3. Let simmer, covered, for 10 minutes. 4. Add chicken broth. 5. Bring to a boil and then add rice. Cook for 10 minutes. 6. Beat egg and cheese together. 7. When rice is tender, stir in egg and cheese. |
