Great side dish for holidays or anytime...
Ingredients:
1 lg. onion, chopped
1 stick butter or margarine
1 sm. jar chopped pimientos, drained
1 sm. green pepper, chopped
1 egg
2 cans cream style corn
2 cups instant rice, cooked as directed
2 tbsp. sugar
salt and pepper to taste
grated american cheese, or your choice of cheese
paprika
Directions:
1. Saute onion, pimiento, and green pepper in butter until tender.
2. Add corn, sugar, egg, cooked rice, salt and pepper.
3. Pour into greased casserole dish.
4. Cover with grated cheese and sprinkle with paprika.
5. Bake, uncovered, 30 to 40 min. at 350 degrees.
