Great side dish for holidays or anytime... Ingredients:
1 lg. onion, chopped |
1 stick butter or margarine |
1 sm. jar chopped pimientos, drained |
1 sm. green pepper, chopped |
1 egg |
2 cans cream style corn |
2 cups instant rice, cooked as directed |
2 tbsp. sugar |
salt and pepper to taste |
grated american cheese, or your choice of cheese |
paprika |
Directions:
1. Saute onion, pimiento, and green pepper in butter until tender. 2. Add corn, sugar, egg, cooked rice, salt and pepper. 3. Pour into greased casserole dish. 4. Cover with grated cheese and sprinkle with paprika. 5. Bake, uncovered, 30 to 40 min. at 350 degrees. |
