Belizean national dish. Red kidney beans and white rice Ingredients:
1/2 cup red kidney beans |
1 tbs. sweet pepper |
1 tbs. onion |
8 cups water |
1 tsp. black pepper |
1 tbs. brown sugar |
1 cup white rice |
1 tbs. coconut milk powder |
Directions:
1. Boil beans in water until soft. When almost soft, add onions, sweet pepper, brown sugar and black pepper. 2. When soft, add rice and coconut milk powder. Stir, cover and cook on lowest heat until rice is fluffy and completely soaked in beans. |
