The ribbony effect from the slicing gives a great visual as well as great flavor next to any BBQ'd meat. Ingredients:
2lb zucchini sliced lengthwise |
2tbs olive oil |
1tbs chopped tarragon |
lemon juice from half a lemon |
Directions:
1. Cut Zucchini about 1/8th inch thick (a slicer really helps). 2. Heat 1 TBS olive oil in pan. Add half the Zucchini and heat through about 5 mins add salt and pepper to taste. Remove to plate. 3. Repeat with other half of Zucchini. 4. put the first half of Zucchini back in pan and add Tarragon and lemon juice. Toss to combine. |
