If you love Rhubarb as I do your going to like this Rhubarb Bread. Enjoy Ingredients:
1 1/2 cups diced rhubarb |
1 cup brown sugar |
1/2 cup sugar |
2/3 cup cooking oil |
2 eggs |
1 cup milk |
1 teaspoon each salt and vanilla |
2 1/2 cups flour |
1 1/2 teaspoon baking powder |
1/2 teaspoon baking soda |
1/2 cup chopped walnuts |
Directions:
1. Mix together both sugars with oil; add eggs and mix well. Add in milk. Add remaining ingredients, mixing well. Pour into two 9 x 5 inch loaf pans. Top each with 1 teaspoon of melted butter and 1 tablespoon of sugar. 2. Bake at 350F for 1 hour or until done. Makes 2 loaves |
