My neigbor gave me this recipe. She uses splenda to sub for the sugar. It's a very sweet and tasty dessert Ingredients:
1 cup sugar |
3 tbs cornstarch |
4 cups sliced rhubarb |
1/2 cup water |
few drops of food color( red ) |
1/2 cup whipping cream |
1 1/2 cups tiny marshmallows |
1 box ( 3 3/4 or 3 5/8 oz pkg instant vanilla pudding |
1 recipe of a graham cracker crust |
1 cup graham cracker crumbs |
2 tbs sugar |
4 tbs melted butter or margarine |
Directions:
1. Make crust and reserve 2 Tbs for toppinmg. 2. Mix crumb ingrdients and press into a 9 inch square pan 3. Bake 350F for 10 minutes and cool 4. Cobime sugar and cornstarch, stir in rhubarb and water. 5. Cook and stir thill thickened. 6. Reduce heat, cook 2 to 3 minutes more 7. Add food coloring if desired. 8. Cool and spoon into a prepared garham cracker crust 9. Cool. 10. Whip cream and fold in marshmallows 11. Spoon over rhubarb mixture 12. Prepare pudding to pkg directions 13. Spread over marshmallow topping 14. Sprinkle with some graham cracker crust crumbs 15. Chill well |
