Love anything rhubarb, guess it must be my all time favorite fruit made into a dessert. Enjoy Ingredients:
1 cup chopped rhubarb |
1/4 cup butter |
1/2 cup brown sugar |
1/3 cup butter |
1/3 cup sugar |
1 egg |
1 1/2 cup flour |
2 tsp. baking powder |
1/2 tsp. salt |
1/2 tsp. nutmeg |
1/2 cup milk |
Directions:
1. Combine rhubarb, 1/4 cup butter and brown sugar in small bowl and mix with fork until blended. Put in bottom of 12 large greased 2. muffin cups. 3. Beat 1/3 cup butter, sugar and egg until fluffy. Sift flour, baking powder, salt and nutmeg. Add to butter-sugar mixture 4. alternately with milk. Stir just to blend then spoon on top of 5. rhubarb. 6. Bake in preheated 350 degree oven for 20-25 minutes. Invert 7. pan on rack and let stand for 3 minutes. Remove pan. Serve warm. |
