I love this recipe in the spring. Rhubarb is soooo yummy, and soooo good for you! Ingredients:
crust |
1 cup flour |
3/4 cup oatmeal |
1 cup brown sugar |
1 tsp cinnamon |
1/2 cup melted butter |

4 cups sliced rhubarb.(about 1/2 inch thick) |
topping |
1 cup white sugar |
3 tbsp corn starch |
1 cup water |
1 oz strawberry liquor |
garnish |
finely chopped mint |
whipped cream |
Directions:
1. Mix crust dry ingredients together... 2. add butter and mix with fork till combined 3. press 1/2 the crust mixture into a 9x13 baking dish 4. layer 4 cups of sliced rhubarb over crust 5. In medium sauce pan combine sugar, corn starch and water 6. whisk together 7. cook on med heat stirring constantly until thick,add liquor,stir 8. pour over rhubarb 9. sprinkle remaining crust mixture over rhubarb 10. bake 350 degree preheated oven for 35 to 45 minutes 11. let cool 12. slice into generous squares 13. serve with finely chopped mint and a spoonful of whip cream |
