I got this recipe from one of my neighbours. It makes such a yummy dessert for lunch time! (I divided up the ingredients for the crust and the filling.) Ingredients:
2 cups flour |
1/2 cup sugar |
1/2 cup butter |
1 teaspoon baking powder |
1/2 teaspoon salt |
1 egg, beaten |
4 cups rhubarb, thinly sliced |
2 cups sugar |
1/2 cup butter, melted |
1/2 cup flour |
2 eggs, beaten |
1 teaspoon vanilla |
Directions:
1. Preheat oven 350°F. 2. Crust:. 3. mix together 2 cups flour, 1/2 cup sugar, 1/2 cup butter, 1 tsp baking powder, 1/2 tsp salt, 1 beaten egg. 4. Press into ungreased 9 x 13 pan. Save 1 cup of crumble mix for topping. 5. Filling:. 6. Mix together well: rhubarb, 2 cups sugar, 1/2 cup melted butter, 1/2 cup flour, 2 beaten eggs, and vanilla. 7. Pour over crust. 8. Sprinkle with topping. 9. Bake 50-60 minutes until top is light brown. |
