3 cups diced fresh rhubarb |
1/2 cup sugar |
1/4 teaspoon salt |
2 (3 ounce) packages strawberry jell-o gelatin dessert |
2 cups cold water |
2 cups finely diced celery |
1/4 cup lemon juice |
Directions:
1. Combine rhubarb, sugar and salt in a sauce pan. 2. Cook over how heat until rhubarb is tender. 3. Do not stir or add water as it makes it's own juice. 4. Bring mixture quickly to a boil. 5. Immediately remove from heat; add Jello and the remaining ingredients. 6. Pour into a mold and chill until firm. 7. (recipe may be halved). |
