This recipe creates a custard-like pudding that goes great with the rhubarb.

1 yellow cake mix
4 cups chopped rhubarb
1 1/2 cups sugar
1 pint unwhipped heavy cream
Directions:
1. Mix the cake according to the directions on the package.
2. Pour the batter into a lightly greased 9 x 13 cake pan.
3. Mix rhubarb and sugar; spoon over the batter.
4. Pour cream over unbaked cake.
5. Bake at 350 degrees F. for 1 hour.
