A great winter comfort pudding- tart, warm and rich... Serve sprinkled with icing sugar and with thick cream.... Ingredients:
1 bunch rhubarb, trimmed and cut into 3cm pieces |
2 tbs caster sugar |
125g butter, softened |
1/2 cup caster sugar, extra |
1 tsp vanilla extract |
1 1/4 cups self raising flour |
1/4 cup milk |
2 tbs icing sugar |
double thick cream, to serve |
Directions:
1. Preheat oven to 180degC. line a baking tray with baking paper. 2. Put rhubarb onto tray and sprinkle with sugar. Bake for 10-15 mins or until just tender. 3. Lightly grease 6 teacups with butter. Using a beater, beat sugar and vanilla until light and creamy. 4. sift flour over butter mixture and add milk. 5. Using a large metal spoon, gently stir until well combined. 6. Spoon rhubarb into prepared teacups. Top with batter. 7. Place cups onto a baking tray and bake for 20-25 mins or until mixture springs back when gently pressed in the centre. 8. Sprinkle with icing sugar and serve with thick cream..... |
