A very simple yet delicious recipe for rhubarb pie I got from my mother many years ago.
Ingredients:
3 tablespoons flour
1 cup sugar
1 egg, beaten
2 cups rhubarb, cut into small pieces
Directions:
1. Sift flour and sugar together.
2. Add egg and beat thoroughly.
3. Add rhubarb.
4. Pour in crust.
5. Add top crust.
6. Make a slit on top.
7. Bake in very hot oven (425 degrees) for 10 minutes then reduce temperature to moderate 350 degrees and bake 35 minutes longer.
