I just had to add another rhubarb recipe to my cookbook. This recipe comes from Grapevine Log Cabins Bed & Breakfast. Ingredients:
1 1/2 cups flour |
3/4 cup brown sugar |
1/2 teaspoon baking soda |
1/2 teaspoon salt |
1/3 cup vegetable oil |
1 egg |
1/2 cup buttermilk |
1 teaspoon vanilla |
1 cup diced rhubarb (fresh) |
1/2 cup chopped walnuts |
1/4 cup packed brown sugar |
1/4 cup chopped walnuts |
1/2 teaspoon cinnamon |
Directions:
1. Combine all ingredients except the topping and mix well. 2. Fill greased muffin cups 3/4 full. 3. Then sprinkle topping over the top and bake at 375 degrees for 20 to 25 minute. |
