A delicious rhubarb filling topped with light and fluffy meringue. Ingredients:
2 cups flour |
2 tablespoons sugar |
1/4 teaspoon salt |
1 cup butter |
2 egg yolks |
4 cups cut rhubarb |
2 cups sugar |
2 tablespoons flour |
4 egg yolks |
6 egg whites |
1/4 teaspoon cream of tartar |
1/4 teaspoon cinnamon |
1 cup sugar |
Directions:
1. Mix crust ingredients and press into 9 X 13 pan. Bake at 350 for 10 to 15 minutes. 2. Pour filling onto hot crust. Bake 30 minutes. 3. Beat meringue until foamy. Gradually add sugar. Beat until stiff and bake 30 minutes. |
