This is from my best friend's collection. I lost the recipe in a recent computer crash and went into panic mode. The orange adds just the right touch. Ingredients:
1 cup butter |
2 cups flour |
3 tablespoons sugar |
5 cups rhubarb, chopped |
2 cups sugar |
1 cup cereal cream |
4 egg yolks |
4 tablespoons flour |
1/4 teaspoon salt |
1 orange, juice and rind of |
6 egg whites, beaten until stiff |
12 tablespoons white sugar |
2 teaspoons vanilla |
Directions:
1. Blend the butter,flour, and sugar and bake in a 9 x 13 pan for 8 minutes at 350. 2. Blend together rhubarb, sugar, cereal cream, egg yolks, flour, salt, and orange rind/juice and pour over base. Bake for 45 minutes at 350. 3. Beat egg whites, sugar and vanilla and spread over top of dessert, and bake until browned (about 15 min.). |
