This is a recipe I obtained from a friend a few years back. She wouldn't tell us what it was when she served it, but when we tasted it and got that robust rhubarb flavor it was love at first sight. Hope you like it as much as we do. Read more . Yummers Ingredients:
3 cups fresh rhubarb diced |
3/4 cup granulated sugar |
1 cup water |
2 tablespoons lemon juice |
1/4 teaspoon salt |
1/4 teaspoon red food coloring |
2 egg whites |
1/4 cup sugar |
1 cup whipping cream |
Directions:
1. In saucepan combine rhubarb, 3/4 cup sugar and water. 2. Cook covered for 15 minutes or until tender then cool slightly. 3. Add lemon juice, salt and food coloring then pour into loaf pan. 4. Freeze until firm at least 8 hours then break unto chunks. 5. Place chunks in a chilled bowl and beat smooth with an electric beater. 6. In another bowl beat egg whites until soft peaks form. 7. Gradually add remaining cup sugar beating to stiff peaks. 8. Whip cream and fold into rhubarb mixture along with egg whites. 9. Freeze firm at least 5 hours then put in refrigerator 1 hour before serving. |
