This is a must every year during rhubarb season. The filling makes a crunchy, light, delicate top, and the crust is sweet and soft. Ingredients:
crust |
1 cup flour |
5 tablespoons powdered sugar |
1/2 butter, softened |
filling |
2 eggs, beaten |
11/2 cups sugar |
1/4 cup flour |
1/2 teaspoon salt |
2 cups finely chopped rhubarb |
Directions:
1. Cream together all crust ingredients. Press dough into a 7x11 pan. Bake at 350 degrees for 15 minutes. While crust is baking, prepare filling. 2. Beat eggs and add sugar, flour and salt. Gently fold in rhubarb; spoon filling over hot crust. Bake for an additional 35 minutes. 3. Cool completely before cutting into bars. |
