Another recipe from my dear friend Mary. It's the only way I have eaten Rhubarb. You can adjust the sweetness or tartness to your taste with the amount of sugar. Ingredients:
3 -4 cups chopped rhubarb |
1 1/2-2 cups sugar |
1/2 teaspoon salt |
3 tablespoons flour |
2 eggs, beaten |
Directions:
1. Prepare your favorite flour based pie crust, (no top needed). 2. Beat eggs. 3. Add sugar, flour, rhubarb, salt. 4. Pour into shell, bake 45 mins. 5. at 350 degrees till it doesn't jiggle in the middle. |
