Easy rhubarb crumble pie with lots of rhubarb. Simple to make. Ingredients:
1 cup sugar |
1 1/2 tablespoons flour |
1 egg, beaten |
1/4 teaspoon cinnamon |
2 3/4 cups coarsely chopped rhubarb |
1 - 8” unbaked pie shell |
crumb topping |
1/2 cup flour |
1/4 cup brown sugar |
1/8 cup butter |
1/4 teaspoon baking soda |
1/4 teaspoon baking powder |
Directions:
1. Filling: 2. Combine sugar, flour and eggs. Stir to form a thick paste. 3. Fold in rhubarb pieces. 4. Spoon into unbaked pie shell. 5. Crumb Topping: 6. Combine all crumb topping ingredients and mix well. 7. Sprinkle evenly over rhubarb mixture. 8. Bake at 400ºF for 10 min. 9. Reduce heat to 350ºF and bake 40-50 minutes more. |
