                    If using Canada Red Rhubarb you may not need as much sugar. Ingredients: 
                    
                        
                                                5 lbs rhubarb  |  
                                                2 tablespoons grated lemon rind  |  
                                                3 quarts water  |  
                                                1/3 cup lemon juice  |  
                                                1 -2 cup sugar (recipe did not say this is a guess)  |  
                                                
                     
                    Directions: 
                    
                        
                            
                                1. Cut rhubarb into chunks. 2. Combine with lemon and water in a large saucepan. 3. Bring to a boil and simmer until rhubab is tender. 4. Stir in lemon juice. 5. Strain through a cloth. 6. Stir in sugar and bring to a boil.                              |
