Ingredients:
2 pound(s) rhubarb cut into 1 pcs. |
1 pound(s) strawberries, quartered quarted |
1 cup(s) sugar |
1/4 cup(s) apple juice |
1 tablespoon(s) grated orange zest zested |
1/2 teaspoon(s) pure vanilla extract |
Directions:
1. In a large heavy-bottomed pot, combine the rhubarb, strawberries, sugar, apple juice and orange xest. Bring to a simmer over medium heat. 2. Reduce heat and gently simmer, stirring occasionally, until the rhubarb has thickened, 55 to 65 minutes; stir in the vanilla. 3. Serve warm or chilled on toast, pancakes, waffles or ice cream, or with goat or ricotta cheese. |
