a rhubarb cake :D Ingredients:
2 cups flour |
1 cup sugar |
4 tsp baking powder |
1/2 tsp salt |
1 egg |
1 cup yogurt |
1/4 cup butter, melted |
2 tsp vanilla |
8 oz rhubarb cut into 1 inch cubes |
topping |
1/4 brown sugar |
1 tbsp flour |
1/2 tsp cinnamon |
1 tbsp butter |
Directions:
1. preheat oven to 350 degrees F. 2. butter and flour a 20 cm square pan 3. sift flour, sugar, baking powder and salt together. 4. beat egg, yogurt, melted butter, and vanilla together. 5. whisk in the flour mixture until just blended [DONT OVERMIX] 6. fold in rhubarb 7. spread batter into cake pan 8. in a bowl combine the brown sugar, flour, and cinnamon. work in the butter with your fingers until crumbly; sprinkle over cake. 9. bake for 45-50 minutes. |
