2 cups rhubarb, cut in 1/2-inch pieces |
1/2 cup sugar |
1/2 cup shortening |
1 1/2 cups sugar |
1 egg |
2 cups flour |
1 teaspoon baking soda |
1/2 teaspoon vanilla |
1 teaspoon cinnamon |
1 cup buttermilk |
Directions:
1. Mix rhubarb and 1/2 cup sugar; set aside. Cream shortening, sugar, and egg. Mix and add dry ingredients, alternating with buttermilk. Add vanilla and rhubarb mix. Grease and flour a 9x13 pan. Bake at 350* for about 35 minute Good with cream cheese frosting. |
